Ingredients
  

  • 1 pound of ground turkey
  • 2 teaspoons of Italian seasoning
  • 1 teaspoon of fennel seeds
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of red pepper flakes
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • Optional: Fresh herbs
  • Optional: Sausage casing

Instructions
 

Prepare the turkey mixture

  • In a large mixing bowl, combine the ground turkey with the Italian seasoning, fennel seeds, garlic powder, red pepper flakes, salt, and black pepper. Mix everything together with your hands or a spoon until the seasonings are evenly distributed. If you’re using fresh herbs like basil or oregano, chop them finely and add them to the mix.

Form the sausage

  • Once your turkey mixture is ready, it’s time to shape it. You can either form sausage patties or roll the mixture into links. If you're making patties, simply scoop about 1/4 cup of the mixture and shape it into a round patty. For links, stuff the mixture into sausage casings (if you have them) or roll the sausage into tight logs.

Cook the sausage

  • Heat the olive oil in a large skillet over medium heat. Once the pan is hot, add your sausage patties or links to the skillet. If you're using loose sausage, you can break it up as it cooks, or leave the patties intact for a crispy exterior. Cook the sausage for 6-8 minutes on each side, or until it’s golden brown and cooked through. For links, make sure the internal temperature reaches 165°F to ensure they’re fully cooked.

Optional grilling method

  • If you prefer grilling your sausage, preheat your grill to medium-high heat and cook the sausage links for about 8-10 minutes, turning them occasionally until they're browned and cooked through.

Let it rest

  • Once your sausage is cooked, remove it from the heat and let it rest for a couple of minutes. This helps the juices redistribute and ensures every bite is as flavorful as possible.
